I love making this up the night before and having a nourishing breakie ready for an early start and a big day ahead


3 tbsp Chia seeds

1 cup coconut milk (I love the creaminess of coconut milk but you can use almond milk or any other milk alternative you prefer)

Pinch of cinnamon (I love cinnamon and it’s great for curbing sugar cravings.  You can include it now or sprinkle some over the top when it’s set)



Combine chia seeds, milk and cinnamon (if using) in a glass jar.  Stir then replace the lid and shake well to ensure seeds are not clumped.  Stir with a fork if needed to further separate seeds.  Store in the fridge overnight.

My favourite is some shredded coconut, couple of slices of banana and some ground flaxseed meal but you can also add berries, stewed fruit, honey, nuts, seeds or any topping of choice.

You may also like to add honey, vanilla essence or stewed before chilling for added sweetness.
